Laura Schaffer, RDN
based in Eugene, Oregon.
One-on-one nutrition therapy that challenges the influence of diet-culture and provides a collaborative approach in support of your health and well-being.

About me
I am a Registered Dietitian Nutritionist (RDN) licensed in the state of Oregon. I have more than 25 years of experience providing care in a variety of clinical, community and public health spaces in New York and Oregon.

I offer on-line and in-person nutrition counseling for adults who reside in Oregon inclusive of body size, age, race, cultural background, sexual orientation, neurotype and gender identity.

Our work together is tailored to what you seek support around. Most commonly I work with people who have health concerns or challenges related to:

-
Chronic dieting or disordered eating
-
Blood pressure, cholesterol or triglycerides
-
Prediabetes, Type 2 diabetes or gestational diabetes
-
Polycystic ovary syndrome (PCOS)
-
Chronic kidney disease (CKD)
-
Chronic liver disease (MASLD / NAFLD)
-
Digestive issues
My approach
My approach draws from clinical nutrition and also healing frameworks that center body diversity and autonomy, which include Body Trust®, Intuitive Eating, and Health at Every Size® (HAES®). I want you to be able to make fully informed decisions to determine how best to nourish your body. Figuring this out for yourself may take some time and unlearning--especially if you have been following rigid rules around eating for many years.
A scientifically grounded path away from a dieting mindset and toward food choices and eating practices rooted in your own truth.
A weight-inclusive, evidence-based practice, which integrates instinct, emotion and rational thought to cultivate attunement with the body's needs.
Health care principles that enable people to attend to their bodies' support needs without a focus on weight loss or medically unnecessary diet restrictions.

Insurance
I am an “in-network” provider with these companies:
-
Cigna
-
Pacific Source
-
Regence BlueCross BlueShield of Oregon including MedAdvantage
-
Trillium Community Health Plan (coming early 2026)
Even if I am “in-network” with your insurance company it does not mean nutrition counseling is a covered benefit for you. This depends on your specific plan and your medical diagnosis.
To understand your benefits, call your insurance company and ask these questions:
-
Do I have covered benefits for Medical Nutrition Therapy: CPT codes 97802 and 97803?
-
If yes, what is the limit, if any, to the number of visits each year?
-
Do I have a deductible to meet before insurance pays?
-
Do I have a co-pay or co-insurance for these visits?
